Hey guys,

here is another week menu for you, showing you what I and my boyfriend eat on a daily basis. Enjoy! :)

What's on the menu?

- On Monday we had a big plate of homemade fried potenta slices and "Mediterranean" potato carrot mash (with added leek, dried tomatoes and olives). T'was good!

- On Tuesday we made a lazy one-pot pasta with whole grain spelt pasta and a sauce made of chopped tomatoes, red bell pepper, sweet potatoes, carrots and tofu. Yumm-o!

- On Wednesday we tried a new recipe: whole-grain spelt salad! Yup. That's a thing. We made ours with lettuce, tomatoes, cucumber, pickles, kidney beans and olives. Similar recipe: over here.

- On Thursday we made a big batch of red cabbage, cooked the German way. This is pretty much how my family makes it for Christmas: 1 kg red cabbage cooked with 1 kg potatoes as well as tofu, apples, a little bit of red wine, vinegar and walnuts. Yumm. Similar recipes: here and here.

- On Friday we were feeling "adventurous" again and tried out another new recipe: rice and "tuna" salad. Vegan obvz. All we did was mash together cooked basmati rice, chickpeas, avocado, pickles, tomatoes, green peas, red onion, mustard, vinegar and sunflower seeds. Similar recipe: over here.

- On the weekend we were at my aunt's birthday party where we ate loads of vegan antipasti with bread and hummus, as well as sweet polenta coconut pudding cake (similar recipe over here, but I used coconut milk to cook the polenta). We also made a simple curry though with jasmine rice, chickpeas, coconut milk, corn, zucchini and bell pepper (basically, leftovers).
