Peanut Butter Jelly Ice Cream (raw, vegan)

WE ALL SCREAM FOR ICECREAM BUT I SCREAM FOR NICECREAM!





Talk about a huge jar of awesomeness! Isn't the vegan lifestyle restrictive?! Yeah... ;)

As a child, i used to love a slice of bread with butter, peanut butter & jelly on top! Yes, both butter and peanut butter, haha! 

Anyway, fortunately peanut butter is vegan (i use organic, salt-free and oil-free peanut butter such as this one - the only ingredient is roasted peanuts!), so there's no reason why i shouldn't still enjoy my PB & J, right? 

And what sounds better than PB & J? 

PB & J ice cream!



PB & J NICECREAM

Preparation time: 10 mins + 3 hours freezing time
Main ingredients: banana, peanut butter, strawberry
difficulty level: easy
serves: 1-2
suitable for: vegan, lactose-free, gluten-free, raw food, paleo, and delicious "even so"

Ice cream:
4-5 ripe bananas, chopped and frozen
2-3 tsp pure
, organic peanut butter
1 tsp Maca powder (optional) *
splash of plant milk or water

Jelly:
5-7 fresh (or frozen and thawed) strawberries

2 tso chia seeds
1 tsp agave nectar (optional)

also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)


* This is absolutely optional, but i added some Maca powder because it is widely used to promote sexual function of both men and women since it serves as a boost to your libido and increases endurance, and i made this for my boyfriend's and my monthly anniversary, soo... is that even a proper sentence? :D

First, prepare the jelly: Blend the strawberries (i used an immersion blender), it doesn't have to me super smooth, so leave it a little chunky if you like. You could add a bit of sweetener - but honestly, it's sweet enough by itself already if you use fresh, ripe strawbs. If you like it to be a little bit thicker, add 2 tsp chia seeds (or more) and set aside to chill in the fridge while you go on to prepare the nicecream. The chia seeds will soak and become gel like - pretty much like my raw vegan Raspberry Jam! Otherwise it will be more like a strawberry sauce, which is also fine.

Now, the ice cream: Add bananas to your food processor or blending machine (i use a food processor) and blend, baby, blend! You may have to pour in a dash of water or soy milk to get the blender going first! Then add the peanut butter and maca powder, and blend again. The ice cream will be thick and creamy and just de-li-cious!  

Now swirl in the jelly with the peanut butter ice cream, spoon it into a big mug, bowl or jar and top with strawberry jam and peanut butter as desired.
